<p><strong>Pyszne jak burgery, zdrowe jak mokry sen dietetyka &#8211; burgery z łososia. Pod chrupiącą panierką czeka na Was soczysty, aromatyczny łosoś w towarzystwie ziół i solidnej dawki witaminy D. Po prostu obiad do zadań specjalnych.</strong></p>



<p>Brytyjczycy nazywają je &#8220;fish cakes&#8221; czyli po prostu rybne ciastka. Ale to nie oni wymyślili taki sposób podawania ryb. Jak wiele różnych pyszności paszteciki, ciastka, kotleciki &#8211; możecie nazywać je jak chcecie &#8211; na Zachód przywędrowały z Azji i mają długą historię sięgającą starożytnych Chin. Dziś każdy niemal kraj ma swoją własną wersję. W Azji znajdziemy kotleciki przyrządzone z krewetek i innych owoców morza. Klasyczne, zachodnie mają bardzo krótką listę składników: ryba, ziemniaki, jajka, cebula, przyprawy, zioła i często bułka tarta. </p>



<p>Rybne ciastka to świetny przykład kuchni w duchu &#8220;zero waste&#8221;, którą przez lata uprawiały gospodynie domowe z różnych zakątków świata. Klasyczny angielski przepis pochodzi z wydanej w połowie XIX wieku &#8220;Księgi zarządzania gospodarstwem domowym pani Beeton&#8221;. Isabella Beaton, Ćwierkiewiczowa wiktoriańskiej Anglii do rybnych kotlecików używała „resztek ryby” i „zimnych ziemniaków” czyli resztek z obiadu.</p>



<p>Dziś rybne burgery, ciastka, paszteciki z domowych kuchni i pubów weszły do kart wielu dobrych restauracji a szefowie kuchni prześcigają się w pomysłach jak je podać. Może z truflami? A może z wanilią? Pomysłów tyle, ilu kucharzy. I dobrze, bo to porządne i niezwykle pyszne jedzenie. Burgery z łososia to mój sposób nie tylko na smaczny obiad, ale także by przełamać nudę pieczonej czy smażonej ryby. Rutynie mówimy zdecydowane &#8220;nie&#8221;! </p>



<p>Burgery z łososia to bardzo proste danie. Zwykle używam do nich świeżego i wędzonego łososia. Możesz jednak zastąpić łososia wędzonego świeżym albo użyć pieczonej ryby, jeśli zostało Ci coś z obiadu albo kolacji. Nie pomijaj ziemniaków &#8211; dzięki nim burgery są miękkie i soczyste. W przepisie znajdziesz mój ulubiony zestaw ziół ale tu też możesz zaszaleć. Użyj tych, które lubisz najbardziej. </p>



<p>Burgery z łososia podaję z ziemniaczanym pure albo pure z groszku. Świetnie sprawdzą się też w burgerowej bułce z sałatą i sosem tatarskim. Próbuj i eksperymentuj &#8211; po to w końcu mamy kuchenne laboratorium. </p>
